做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清(qīng )水(shuǐ ),放入煎煮好(hǎo )的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时(shí ),下(xià )盐调味(wèi )即可品尝。
