做法:洗净宰好鲫鱼(yú ),洗净淮山和(hé )薏米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块(kuài )姜,热锅,用姜(jiāng )块在(zài )锅(guō )上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他材料,武(wǔ )火煮(zhǔ )沸,转中(zhōng )小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。
