做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
