做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
