做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上(shàng )锅盖焖。
