做(zuò )法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍,放两勺油(yóu ),待油六(liù )成热(rè )下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲(bāo )里(lǐ )的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
