做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
