做法:春笋(sǔn )切成片后加少许盐捞(lāo )出(chū )后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖上锅盖焖。
