做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮(zhǔ )开(kāi )后转(zhuǎn )中火(huǒ )。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
