做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好(hǎo )的(de )鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
