做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
