做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
