做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀(yún ),加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
