做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小块(kuài )姜,热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油(yóu ),待油六成(chéng )热下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一个半小时,下(xià )盐(yán )调味即可(kě )品尝。
