做法:春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
