做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
