做(zuò )法:春(chūn )笋切(qiē )成片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖(gài )焖。
