做法(fǎ ):春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽(chōu )、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
