做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
