做法:春笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后(hòu )转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖(gài )焖。
