做法:洗净宰好鲫鱼,洗净淮山和(hé )薏(yì )米。用清水(shuǐ )把陈(chén )皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一(yī )遍,放(fàng )两勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味即可品尝。
