做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡(pào )软,拍裂(liè )一小块姜(jiāng ),热锅,用姜块在(zài )锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和其他(tā )材料(liào ),武火煮沸,转中小火煲一个半小时(shí ),下盐调(diào )味即(jí )可品尝。
