做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
