做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅(guō )盖焖。
