做法:洗(xǐ )净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他(tā )材料(liào ),武火(huǒ )煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下(xià )盐调味即可品尝。
