做法(fǎ ):春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
