做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清(qīng )水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
