做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦(cā )一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入(rù )煎煮好(hǎo )的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
