做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
