做法:春笋切成片(piàn )后加少许盐捞出(chū )后(hòu )用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
