做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到(dào )水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
