做(zuò )法:洗净(jìng )宰好鲫鱼(yú ),洗净淮(huái )山和薏米。用(yòng )清水把陈皮(pí )泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一(yī )个半小(xiǎo )时(shí ),下盐调味(wèi )即可品尝。
