做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清(qīng )水把(bǎ )陈皮泡软,拍裂(liè )一(yī )小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小(xiǎo )时(shí ),下盐调味即可品(pǐn )尝。
