做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大(dà )火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
