做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖(gài )焖。
