做法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖。
