做法:春笋(sǔn )切成片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖(mèn )。
