做法:春笋(sǔn )切成片(piàn )后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁(zhī )时盖(gài )上锅(guō )盖焖。
