做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清(qīng )水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热(rè )下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫(jì )鱼和其他(tā )材(cái )料(liào ),武火煮沸,转(zhuǎn )中小火(huǒ )煲一个半小时,下盐调味即可品尝。
