做法:春笋切成片后加少许盐(yán )捞(lāo )出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
