做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
