做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火(huǒ )。煮到水(shuǐ )快(kuài )熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
