做(zuò )法:春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
