做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热(rè )锅,用姜块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成(chéng )热(rè )下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫(jì )鱼和其(qí )他材(cái )料(liào ),武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
