做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖(gài )焖(mèn )。
