做(zuò )法:春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
