做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油(yóu ),放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
