做法:春(chūn )笋切(qiē )成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
