做(zuò )法:春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
