做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺(sháo )油,待(dài )油六成热下(xià )鱼,煎至微(wēi )黄。煮沸(fèi )瓦煲里的清水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐调味即可品尝。
